Late Night Panna Cotta

Today Chef Haze decided to make a late night treat! Well, a treat to be had tomorrow. Panna cotta! It is now chilling in the fridge waiting to be consumed tomorrow morning!
Panna cotta, Italian cooked cream, is a surprisingly simple to make. It is sweetened cream, thickened with gelatin and molded. The cream may be aromatized with rum, coffee, vanilla or other flavorings. Haze chose blueberries to add a bit of summer.
In a saucepan, bring a 1/2 cup sugar, two tablespoons lemon, and 1 cup or blueberries to a light simmer...just until the sugar has melted. Add a tablespoon or two of this mixture to each of the six ramekins.
In another saucepan add 3 cups of cream and one packet of gelatin. Let this sit for five minutes so that the gelatin dissolves. Next turn on the heat to medium letting it warm through and then add half a cup of sugar. Do not let boil, just warm enough to let the sugar dissolve.
Take a small strainer and use this to catch any impurities as you pour the cream mixture over the blueberries into the ramekins.
Let this sit for 10 minutes before transferring the ramekins to the fridge. Let sit for 3 hours. Add a bit more of that blueberry sauce to the top before serving.
